What you order from Chinese takeaways is only a fraction of what you can eat in China. Alongside Cantonese food, the variety most commonly served in Britain, China offers a whole host of regional specialities.

Chinese Cuisine The emphasis is very much on hot food, although you will find ice cream in some places. Don't be surprised to find rice served with most meals. Soup, noodles, noodle-soups, dumplings, stir-fries and pickled vegetables are regulars on Chinese menus, along with the regional specialities mentioned below.

The chopstick culture is not a myth and you'll probably be an expert by the time you leave!

Savoury Chinese Dishes

Chinese Cuisine - Beijing
Peking duck, or Beijing duck, is the authentic version of Britain's crispy aromatic duck. The duck will be skilfully shredded before your eyes, and spring onions and plum sauce left for you to roll inside pancakes.

Chinese Cuisine - Hohhot
A similarly DIY-type meal is the Mongolian hotpot, popular in Hohhot. The diner dips pieces of meat, vegetables and fish into a bubbling pan of stock until they're cooked.

Chinese Cuisine - Guilin
If you're in Guilin and feeling particularly brave, you can try snake or scorpion.

Chinese Cuisine - Hong Kong
In Hong Kong, you can feast on dim sum, which are similar to the idea of Spanish tapas: you pick and choose small dishes from a trolley. Usually served for breakfast or lunch rather than dinner, dim sum includes dishes like dumplings, soup, congee (rice porridge) and rice noodle rolls filled with meat, vegetables and fish.

Chinese Cuisine - Sichuan
You might want a glass of water or six on standby for your first taste of Sichuan cuisine - they cook it hot and fiery! Sichuan pepper is used in many dishes, as is chilli. You have been warned.

Chinese Cuisine - Sweet Things

China isn't known for its deserts, although you'll find pineapple rice in Jinghong, in Yunnan, and an assortment of tropical fruit.


Chinese Cuisine - Drinking in China

The Chinese are big tea drinkers and tea is served with most meals in restaurants - although not usually with milk or sugar. You can also find exotic fruit juices and cheap beer.
